Cured (Dry) Olives

Cured (dry) olives are mainly CHALKIDIKI and THASSOS olives which have cured naturally on the olive trees and are handpicked between December and January. They are further dehydrated placing these for a short period on a bed of coarse sea salt. In addition to this, in recent years it is common to oven dry both Natural Black and Kalamata olives to give olives a distinctive sweet taste and a slightly wrinkled surface.
